My Version of Whole Foods’ Superfoods Salad

Ingredients

Salad Ingredients

Thinly sliced Swiss Chard

Grated carrots

Thinly sliced red cabbage

Edamame

Red Onion

Sunflower seeds

Chopped cashews

Dried or frozen wild blueberries, defrosted

Goji Berries

Chopped tomatoes

Dressing

1/4 cup fresh OJ

2 Tbsp Apple cider vinegar

2 soft dates

1 packet frozen Acai Purée, defrosted

1/4 frozen blueberries

Garlic salt (or 1/4 tsp garlic granules + fine sea salt)

1/8 tsp onion granules

2 dashes of cayenne

Directions

1No specific amounts for this salad as you can just use how much/little of each ingredient you are in the mood for! But to serve 2 people I would recommend something like this: 2 heads of swiss chard, 1 large carrot, grated, 1/2 cup cabbage, 1/4 cup each red onion, goji berries & sunflower seeds, 1/2 cup each edamame, tomatoes, cashews & blueberries.

2To make dressing, simply blend everything in blender until smooth. Makes enough for 3-4 servings-enjoy!
